1. Preheat oven to 400°.
2. In ovenproof skillet, fry onion in oil until tender. Add potatoes, bacon, ham and beef. Heat through.
3. Stir parsley and seasonings into eggs; pour into skillet. Bake until a knife inserted near the center comes out clean, 20 to 30 minutes. Makes 8 to 10 servings
