Farmhouse Omlet
from the kitchen of Grandma Emerick

1 1/2 c Chopped onion
3 tb Oil
4 c Diced peeled cooked potato
8 sl Bacon; cooked & crumbled
1/2 c Diced cooked roast beef
12 Eggs; beaten
3 tb Minced fresh parsley
2 ts Paprika
1 ts Salt
1/2 ts Pepper
1/2 ts Garlic salt
1/2 ts Celery salt

1. Preheat oven to 400°.
2. In ovenproof skillet, fry onion in oil until tender. Add potatoes, bacon, ham and beef. Heat through.
3. Stir parsley and seasonings into eggs; pour into skillet. Bake until a knife inserted near the center comes out clean, 20 to 30 minutes. Makes 8 to 10 servings
